Rich and Cheesy Shrimp-Stuffed Baked Potatoes

Instructions

  1. Preheat the oven to 400 F. Rinse and prick potatoes.

  2. Cook potatoes in the microwave for 10 minutes until done.

  3. Halve potatoes lengthwise.

  4. Scoop flesh into a bowl, reserving skins on a baking sheet.

  5. Sauté shrimp scampi in a skillet for 6-7 minutes until nearly cooked.

  6. Remove shrimp and set aside.

  7. Pour scampi sauce into the potato flesh and mash.

  8. Stir in cheese, sour cream, shrimp, and black pepper to taste.

  9. Fill potato skins with the mixture and bake for 10-15 minutes until heated.

  10. Garnish with fresh dill and serve hot.
