Rice With Corn and Peas
A vibrant and easy-to-prepare mid-summer side dish combines rice, corn, and peas for a colorful and tasty accompaniment.

Instructions

In a medium saucepan, heat butter or oil over medium-high heat. Add rice and cook, stirring, until grains are opaque.

Pour in broth, bring to a boil, then cover and simmer for 15 minutes without lifting the lid.

While rice cooks, husk corn and cut kernels from cobs into a large bowl. Shell peas into the same bowl (about 1/2 cup).

After 15 minutes, quickly remove lid from rice, add corn and peas on top without stirring, and re-cover.

Cook undisturbed for an additional 5 minutes.

Remove lid, fluff rice with a fork, and combine corn and peas. Season with salt and pepper, then serve hot.
