Rice With Corn and Peas

Instructions

  1. In a medium saucepan, heat butter or oil over medium-high heat. Add rice and cook, stirring, until grains are opaque.

  2. Pour in broth, bring to a boil, then cover and simmer for 15 minutes without lifting the lid.

  3. While rice cooks, husk corn and cut kernels from cobs into a large bowl. Shell peas into the same bowl (about 1/2 cup).

  4. After 15 minutes, quickly remove lid from rice, add corn and peas on top without stirring, and re-cover.

  5. Cook undisturbed for an additional 5 minutes.

  6. Remove lid, fluff rice with a fork, and combine corn and peas. Season with salt and pepper, then serve hot.
