Rice Porridge (Risengrød or Risgrynsgröt)

Instructions

  1. Start by bringing water, butter, and salt to a rapid boil in a heavy-bottomed saucepan.

  2. Rinse the rice, then stir it into the boiling mixture, constantly stirring as you reduce the heat to low.

  3. Cover the pot and simmer for 10 to 15 minutes until the rice absorbs most of the water.

  4. Add the milk, stir to incorporate, and bring the mixture to a boil while constantly stirring; immediately reduce heat to low.

  5. Cover the pot and allow it to cook without stirring for 45 minutes.

  6. Serve warm with cinnamon-sugar and butter, or with cold milk poured over.
