Rice Dressing (aka Dirty Rice)

Instructions

  1. Season ground beef, chopped chicken livers, and gizzards with salt and pepper.

  2. Brown the seasoned meats in oil or shortening in a large skillet over medium-high heat, stirring until no longer pink.

  3. Add chopped celery, onion, bell pepper, and garlic; cook, stirring, until onions are translucent.

  4. Pour in a small amount of water, cover, and simmer on low heat until vegetables are tender.

  5. Stir in cooked rice to combine.

  6. Adjust seasonings with salt and pepper to taste.

  7. Cover and let stand until ready to serve.

  8. Garnish with green onions or parsley and fluff with a fork before serving, if desired.
