Rice Calas (New Orleans Rice Fritters) Recipe

New Orleans-style rice calas are moist, textured fritters, traditionally made with rice.

Instructions

  1. Heat deep fryer oil to 365 F.

  2. Whisk eggs.

  3. Stir in cooled rice, sugar, cinnamon, nutmeg, salt, vanilla, and baking powder.

  4. Add about 1 cup of flour, or enough to form a thick, spoonable batter.

  5. Drop batter by heaping teaspoonfuls into the hot oil.

  6. Fry small batches for 4-6 minutes until golden brown and crisp, turning as needed.

  7. Drain on paper towels, then sprinkle generously with confectioners' sugar.

  8. Serve.
