Rhubarb Freezer Jam

Instructions

  1. In a medium pot over low heat, combine rhubarb, 3/4 cup sugar, and water.

  2. Stir constantly for 5 minutes until the sugar dissolves.

  3. Continue cooking and stirring for 15-20 minutes until the rhubarb pieces break down and the mixture thickens to an applesauce consistency.

  4. Remove from heat. Taste and add additional sugar if desired, stirring until dissolved.

  5. Cool completely to room temperature before use or storage.
