Instructions

  1. Preheat the oven to 350 F (180 C) and butter an 8-inch square baking dish.

  2. In a bowl, combine brown sugar, flour, oats, melted butter, and cinnamon; mix until crumbly.

  3. Press half of this crumb mixture into the prepared dish, then top with sliced rhubarb.

  4. In a saucepan, combine 1 cup granulated sugar, cornstarch, 1 cup water, and vanilla; cook, stirring, until the mixture thickens and clears.

  5. Pour the thickened syrup over the rhubarb in the baking dish.

  6. Evenly spread the remaining crumb mixture over the rhubarb filling.

  7. Bake for 45 to 55 minutes, or until the topping is browned and the filling is bubbling.
