Rhubarb Betty Dessert
A classic rhubarb dessert, similar to an apple brown betty, features a baked breadcrumb topping.

Instructions

Preheat the oven to 400 F.

Lightly butter a 1 1/2 to 2-quart baking dish.

Chop rhubarb; combine with sugar, tapioca, lemon rind, and salt in a bowl.

In a separate bowl, mix bread crumbs with melted butter and vanilla.

Layer the baking dish, starting with rhubarb and ending with breadcrumbs.

Cover the dish with foil and bake for 25 minutes.

Remove foil and bake for an additional 10 minutes, or until browned.

Serve warm with cream or ice cream.
