Reuben or Rachel Sandwich

A classic deli-style sandwich, either a Reuben featuring corned beef and sauerkraut or a Rachel with turkey or pastrami and coleslaw, grilled on rye with Swiss cheese and Russian dressing.

Instructions

  1. Preheat a heavy skillet or griddle over medium-low heat.

  2. To prepare a Reuben: Spread 1 tablespoon of Russian dressing on each rye bread slice.

  3. Layer one bread slice with corned beef, Swiss cheese, and then drained and squeezed sauerkraut, topping with the second bread slice (dressing-side down).

  4. To prepare a Rachel: Spread Russian dressing on each rye bread slice.

  5. Layer one bread slice with turkey or pastrami, Swiss cheese, and then drained coleslaw, topping with the second bread slice.

  6. For either sandwich, spread softened butter on both exterior sides.

  7. Place the sandwich in the preheated skillet and cook until the bottom is golden brown.

  8. Flip the sandwich and continue cooking until the second side is browned and the cheese has melted.
