Restaurant-Quality Mexican Red Rice Recipe

Instructions

  1. In a medium saucepan, heat oil over medium heat. Sauté onion for 3-5 minutes until translucent.

  2. Add rice and sauté, stirring frequently, for 5 minutes until golden brown.

  3. Stir in garlic and sauté for 1 minute.

  4. Remove pan from heat. Stir in chicken broth, tomato puree, and any optional parsley or vegetables.

  5. Return pan to heat, bring to a boil, then reduce heat to low and cover.

  6. Simmer for 15-20 minutes. After 15 minutes, check if liquid is absorbed; continue cooking briefly if needed.

  7. Remove from heat and let sit, covered, for 10 minutes.

  8. Fluff with a fork before serving.
