Instructions

  1. Combine red wine and vinegar in a large (1/2 gallon minimum) wide-mouthed glass or ceramic container and stir.

  2. Cover the container with cheesecloth, securing it to keep out flies, then place it in a warm area away from direct sunlight.

  3. After about two weeks, check for the vinegar mother and assess the smell and taste; allow further fermentation for stronger flavor.

  4. When desired strength is reached, strain the mother through cheesecloth and bottle the vinegar in a sealed container.
