A homemade red wine vinegar, crafted from wine and raw vinegar, offers superior flavor through a simple, time-intensive fermentation process.

Combine red wine and vinegar in a large (1/2 gallon minimum) wide-mouthed glass or ceramic container and stir.

Cover the container with cheesecloth, securing it to keep out flies, then place it in a warm area away from direct sunlight.

After about two weeks, check for the vinegar mother and assess the smell and taste; allow further fermentation for stronger flavor.

When desired strength is reached, strain the mother through cheesecloth and bottle the vinegar in a sealed container.
