Red Devil's Food Cake With Vanilla Frosting
A classic red devil's food cake, rich with buttermilk, cocoa, and red food coloring, is traditionally finished with a smooth vanilla frosting.

Instructions

Preheat the oven to 350 F (180 C) and grease and flour two 8-inch round cake pans.

Sift granulated sugar and cocoa powder, then blend them with melted shortening in a mixing bowl.

Stir in beaten eggs, hot coffee, and food coloring until well combined.

In a separate bowl, thoroughly combine flour, salt, baking soda, and baking powder.

Mix buttermilk (or its substitute) and 1 teaspoon of vanilla in a cup.

Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk-vanilla blend, mixing until just combined.

Pour the batter evenly into the prepared pans and bake for 25 to 30 minutes, or until a cake tester inserted into the center comes out clean.

Cool the cakes in the pans on a rack for 10 minutes before transferring them to racks to cool completely.

To make the frosting, combine confectioners' sugar, butter, and 1 1/2 teaspoons of vanilla with an electric mixer, then beat in milk until a creamy, spreadable consistency is achieved.

Spread frosting on one cake round, top with the second round, then frost the top and sides of the entire cake.
