Recipe to Make Perfect Candied Figs, Apricots, or Pear Tomatoes
A traditional method preserves fresh figs or pear tomatoes as sweet candied fruit.

In a large bowl, combine 4 quarts water and baking soda, then soak the chosen fruit for 10 minutes and drain.

In a large saucepan, combine sugar and 2 cups water, then bring the syrup to a boil.

Add the drained fruit to the boiling syrup and simmer for 20 minutes.

Remove from heat, cool, and cover the mixture overnight. The following day, simmer for another 20 minutes and cool again. Repeat this daily process until the syrup is fully absorbed, adding water if it crystallizes during reheating.

Once the syrup is absorbed, dry the fruit on waxed paper trays in the sun, dredge with sugar, and store in an airtight container.
