Instructions

  1. Preheat oven to 375 F.

  2. In a medium bowl, whisk together eggs, half-and-half, salt, pepper, and nutmeg until well combined.

  3. Prepare and spread one of the following fillings into the blind-baked crust:

  4. Bacon and Onion: Cook bacon until browned, remove, and cool. Cook sliced onions in bacon fat until soft; cool. Spread the cooled bacon and onions over the crust, then top with grated cheese.

  5. Mushroom and Spinach: Thoroughly drain and coarsely chop spinach. Spread the mushrooms and spinach evenly into the crust, then sprinkle with cheese.

  6. Roasted Red Pepper and Onion: Thoroughly dry roasted red pepper. Spread the red pepper and onions evenly into the crust, then sprinkle with cheeses.

  7. Carefully pour the custard over the filling. Adjust custard quantity if necessary by whisking an additional egg with 1/4 cup half-and-half.

  8. Bake for 25 to 30 minutes, until the custard is set and lightly browned.

  9. Let cool for 10 minutes or more before slicing.
