Instructions

  1. In a small saucepan, combine raspberries, sugar, and two tablespoons of cold water; cook over low heat until softened and juices release.

  2. Remove from heat, cool slightly, then push the mixture through a fine sieve to remove pips. Let the raspberry pulp cool completely.

  3. Blend the cooled raspberry pulp with Skyr yogurt and vanilla extract until smooth.

  4. Pour the mixture into popsicle molds, tap to remove air bubbles, then insert sticks and freeze for a couple of hours.

  5. To melt chocolate, place grated chocolate in a heatproof bowl over a pan of simmering water, ensuring the bowl does not touch the water, and stir until smooth.

  6. Dip each frozen popsicle into the melted chocolate, then immediately into nuts, and return to the freezer until set.

  7. Store finished popsicles in a lidded container in the freezer.
