Raspberry Chipotle Sauce

A sweet, savory, and spicy raspberry chipotle sauce, excellent for use as a barbecue sauce, glaze, or dip.

Instructions

  1. Heat olive oil in a medium saucepan over medium-high heat.

  2. Cook onions for about 4 minutes until soft and slightly caramelized.

  3. Add garlic and chipotle peppers; sauté for 1 minute.

  4. Stir in raspberries and cook until soft for 2 to 3 minutes.

  5. Add vinegar and stir to deglaze the pan.

  6. Combine sugar and salt, then bring the mixture to a boil.

  7. Reduce heat to medium and simmer for 8 to 10 minutes until the sauce thickens and reduces by half.

  8. Remove from heat and cool the sauce completely.

  9. For a smooth glaze, strain the sauce through a fine-mesh strainer, pressing solids to extract all liquid.
