Raspberry Chicken

Grilled or broiled chicken is elegantly paired with a sweet and tart raspberry sauce featuring fresh berries and vinegar.

Instructions

  1. Prepare a grill for medium heat, or preheat your broiler or pan grill.

  2. Pound chicken breasts to an even thickness, season with salt, pepper, and balsamic vinaigrette, then refrigerate.

  3. Clean raspberries, setting a few aside for garnish.

  4. Combine remaining berries, jam, vinegar, tarragon, 1/2 teaspoon salt, and 1/8 teaspoon pepper in a saucepan; bring to a boil.

  5. Reduce heat and simmer for 5 minutes, stirring, then cool slightly.

  6. Spoon 2-3 tablespoons of sauce into a bowl, then strain the rest through a fine mesh strainer into the same bowl; keep warm or refrigerate.

  7. Grill or broil chicken for 3 minutes per side, or until cooked through.

  8. Arrange chicken, spoon sauce over it, and garnish with fresh berries if desired.
