Raspberry Chicken
Grilled or broiled chicken is elegantly paired with a sweet and tart raspberry sauce featuring fresh berries and vinegar.

Instructions

Prepare a grill for medium heat, or preheat your broiler or pan grill.

Pound chicken breasts to an even thickness, season with salt, pepper, and balsamic vinaigrette, then refrigerate.

Clean raspberries, setting a few aside for garnish.

Combine remaining berries, jam, vinegar, tarragon, 1/2 teaspoon salt, and 1/8 teaspoon pepper in a saucepan; bring to a boil.

Reduce heat and simmer for 5 minutes, stirring, then cool slightly.

Spoon 2-3 tablespoons of sauce into a bowl, then strain the rest through a fine mesh strainer into the same bowl; keep warm or refrigerate.

Grill or broil chicken for 3 minutes per side, or until cooked through.

Arrange chicken, spoon sauce over it, and garnish with fresh berries if desired.
