Instructions

  1. Heat oil or lard in a medium saucepan over medium-high heat.

  2. Add onions, garlic, and fresh chile; sauté for 2 to 3 minutes until softened.

  3. Reduce heat to medium-low, then add tomatoes and cook for 5 to 6 minutes until soft.

  4. Stir in oregano, ground chile (if using), and salt; simmer for 5 more minutes.

  5. Serve as-is, or for a smoother sauce, cool and blend, straining if desired.
