Instructions

Heat oil in a deep pan, add cumin seeds until sizzling stops, then add and fry onions until translucent (5 minutes).

Stir in ginger and garlic, frying for 2 minutes.

Add green chiles, tomatoes, coriander, cumin, garam masala, and turmeric; fry until oil separates (10 minutes).

Incorporate kidney beans, warm water, asafetida, and salt to taste. Cook until beans soften and sauce reduces to desired consistency (25 minutes).

Roughly mash some beans to thicken the sauce.

Garnish with cilantro; serve hot with rice and kachumber salad.
