Radish Potato Soup - Rettich Kartoffel Suppe

Instructions

  1. Dice the onion, garlic, and peeled potatoes.

  2. Heat oil in a saucepan and sauté onion until translucent.

  3. Add potatoes and cook for a few minutes, then add garlic and sauté for 30 seconds.

  4. Deglaze the pan with white wine, stirring until almost evaporated.

  5. Add broth and simmer until potatoes are soft.

  6. Meanwhile, peel and thinly slice the radishes.

  7. Add radishes to the soup and cook for about 5 minutes, or until soft.

  8. Optionally, puree the soup, then return it to the pan.

  9. Stir in cream (if desired), salt, and pepper to taste.

  10. Serve hot, optionally with buttered croutons or sliced sausage.
