Instructions

  1. Sauté carrots and onion in a pot with oil for 3-4 minutes over medium-high heat.

  2. Add rice cakes, fish cakes, and water; bring to a boil.

  3. Reduce to a simmer, then mix in soy sauce, gochujang, and sugar.

  4. Once the sauce thickens, add dry ramen noodles and cook, adding more water if necessary, until tender.

  5. Stir in scallions, remove from heat, and top with hard-boiled egg halves if desired.
