Quinoa and Black Bean Burgers

Instructions

  1. Bring quinoa and vegetable broth to a simmer in a saucepan. Cover, cook on low for 12-15 minutes, then let sit covered for 5 minutes; fluff with a fork.

  2. Place black beans in a large bowl, season with salt and pepper, and mash.

  3. Combine the mashed beans with cooked quinoa, breadcrumbs, red pepper, green onions, egg, cumin, and paprika. Stir well, adjusting breadcrumbs if needed, and season to taste.

  4. Form the mixture into 4-5 patties, 1 inch thick.

  5. Heat olive oil in a skillet over medium heat.

  6. Cook patties for 3-5 minutes per side until well-browned and crispy, totaling 8-12 minutes.

  7. Serve burgers in buns with desired condiments.
