Quince Paste (Dulce de Membrillo)
A sweet, firm fruit preserve, quince paste is crafted from apple-like quince fruit and traditionally served to complement cheese.

Instructions

Peel, core, and cut quince into large wedges.

Place the quince in a pot, cover with water, and add lemon juice.

Bring to a boil and cook the fruit until very soft; drain and cool for 5 minutes.

Process the cooked fruit in a food processor or blender until smooth.

Measure the fruit puree and transfer it to a heavy-bottomed pot.

Add sugar equal to three-fourths the fruit volume and a pinch of salt; stir to combine.

Bring the mixture to a low boil, then simmer on low heat, stirring frequently, until it becomes a thick, stretchy, almost dry paste that forms a ball and turns an orange-red color.

Pour the hot paste into a lightly oiled dish and let it cool completely.

Slice the firm paste for serving or storage.
