Quince Paste (Dulce de Membrillo)

Instructions

  1. Peel, core, and cut quince into large wedges.

  2. Place the quince in a pot, cover with water, and add lemon juice.

  3. Bring to a boil and cook the fruit until very soft; drain and cool for 5 minutes.

  4. Process the cooked fruit in a food processor or blender until smooth.

  5. Measure the fruit puree and transfer it to a heavy-bottomed pot.

  6. Add sugar equal to three-fourths the fruit volume and a pinch of salt; stir to combine.

  7. Bring the mixture to a low boil, then simmer on low heat, stirring frequently, until it becomes a thick, stretchy, almost dry paste that forms a ball and turns an orange-red color.

  8. Pour the hot paste into a lightly oiled dish and let it cool completely.

  9. Slice the firm paste for serving or storage.
