Quince Marmalade Recipe

Instructions

  1. Wipe quinces clean, then quarter and core them, placing cores and seeds in a tied cloth.

  2. Dice the quinces and combine with water and the seed sachet in a jam pan.

  3. Thinly slice lemons and add to the pan.

  4. Simmer for 45-60 minutes until tender, then remove and discard the seed sachet.

  5. Warm sugar in a 250F oven for 5 minutes or microwave for 1 minute; stir into the fruit mixture.

  6. Boil rapidly until the quince turns rich pink and reaches the setting point, testing on a chilled saucer until it forms a skin and runs lumpy.

  7. Pour into sterilized jars, lid them, and invert for two minutes to seal.

  8. Once cold, label and store in a cool place for up to 12 months.
