Quick Vanilla Rice Pudding Recipe

A comforting creamy vanilla rice pudding that can be enjoyed hot, warm, or chilled.

Instructions

  1. Heat milk and vanilla extract in a saucepan over medium-low heat.

  2. When the milk simmers, skim any skin, then add rice and stir. Increase heat to maintain a lively simmer, cooking for about 8 minutes until the mixture begins to thicken.

  3. Cover the pot, reduce heat, and stir occasionally for 5-7 minutes.

  4. Uncover and continue cooking, stirring frequently, for 9-11 more minutes until the rice is done and the pudding thickens to your preference.

  5. Remove from heat, then stir in sugar, lemon zest, and a pinch of salt, adjusting sugar to taste.

  6. Serve hot, at room temperature, or chilled, optionally sprinkled with cinnamon.
