Slice steak into 1/2-inch strips against the grain, and peppers and onion into 1/4-inch strips.

Heat oil in a large frying pan over medium-high heat. Add steak, salt, and pepper; cook until juices mostly evaporate.

Stir in sliced peppers and onion, cover, and cook for 5 minutes, stirring occasionally.

Uncover and continue cooking until juices reduce, beef is fully cooked, and vegetables are tender.
