Quick Scalloped Potatoes With Ham Recipe

A quick and easy dish, these scalloped potatoes with ham and optional cheddar cheese can be served as either a satisfying side or a main course.

Instructions

  1. Preheat the oven to 350 F and butter a shallow 2-quart baking dish.

  2. Cut the ham into 1/2-inch cubes.

  3. Place half the potatoes in the prepared dish, season with salt and pepper, then layer with ham and the remaining potatoes.

  4. Combine condensed soup, milk, onion, green bell pepper, and a dash of pepper in a bowl.

  5. Pour the soup mixture over the potatoes, then scatter small pieces of butter over the top.

  6. Cover with foil and bake for 1 hour.

  7. Remove the foil and continue baking for 30 to 45 minutes, or until the potatoes are tender and the top is browned.

  8. If desired, sprinkle shredded cheddar cheese over the potatoes during the last 15 minutes of baking.
