Instructions

  1. Clean mushrooms, trim tough stems, and slice them 1/8 to 1/4-inch thick.

  2. Heat olive oil in a large skillet over medium-high heat. Sauté shallots for 1 minute, then add the sliced mushrooms.

  3. Cook, stirring often, for 8 to 10 minutes until mushrooms release liquid and begin to brown.

  4. Stir in garlic and white wine. Increase heat to high and cook for about 2 minutes until the wine has evaporated.

  5. Add fresh herbs, stir well, season to taste, then mix in parsley and serve.
