Instructions

  1. Start boiling water, vinegar, honey, and salt in a saucepan, stirring to dissolve.

  2. Wash and trim radishes; peel watermelon or daikon varieties, but leave rosy-skinned types unpeeled.

  3. Slice radishes 1/8-inch thick, or halve/keep very small ones whole.

  4. Distribute dill, garlic, bay leaves, mustard seeds, cumin seeds, and optional pepper flakes into two clean pint jars.

  5. Pack the prepared radishes into the jars with the spices.

  6. Skim any foam from the boiling brine.

  7. Pour the hot brine over the radishes, ensuring full submersion.

  8. Seal jars tightly and refrigerate; the radishes are ready in 24 hours.
