Quick Pesto Roasted Chicken Recipe

Instructions

  1. Preheat oven to 425 F.

  2. Separate the chicken skin from the meat, then push pesto under the skin, rubbing any remaining pesto over the top and seasoning lightly with salt and pepper.

  3. Optionally, stuff the chicken cavity with cut-up lemon, orange, and fresh or dried basil.

  4. Roast for 15 minutes at 425 F, then reduce the oven temperature to 350 F and continue roasting for 18-20 minutes per pound, or until an internal temperature of 165 F is reached in the thickest part of the thigh.
