Quick Meatloaf Chili

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Sauté onion and garlic for 5 minutes, then add jalapeño and cook for another 3 minutes.

  3. Stir in meatloaf, diced tomatoes, tomato sauce, beef broth, black beans, chili powder, cumin, Tabasco, and seasonings; bring to a simmer. Reduce heat to low and cook for 25-35 minutes until thickened.

  4. Serve immediately with sour cream, Parmesan cheese, and extra jalapeños.
