Quick Hoppin' John (Black Eyed Peas With Ham)

Instructions

  1. Heat bacon drippings in a large skillet over medium heat.

  2. Add chopped onion and cook until translucent, about 2 minutes.

  3. Stir in black-eyed peas, their liquid, cooked ham, and cayenne pepper.

  4. Simmer for 10 minutes until the liquid reduces by half.

  5. Stir in cooked rice and salt to taste, or serve rice separately topped with the bean mixture.

  6. Garnish with sliced onion; serve with cornbread and greens if desired.
