Quick Focaccia Recipe
A soft, delicious focaccia can be prepared and baked in under two hours.

Instructions

Position an oven rack centrally and turn on the oven light.

Grease a 9x13-inch baking pan with 2.5 tablespoons of olive oil, coating all surfaces.

In a stand mixer with a dough hook, combine flour, yeast, salt, sugar, water, and 2 tablespoons olive oil.

Mix on low speed for 2 minutes until the dough forms.

Let the dough rest for 10 minutes.

Knead on medium speed for 4 minutes, scraping the bowl, until combined and no flour is visible.

Scrape the dough into the greased pan, pressing and stretching to fit.

Proof in the oven with the light on for 1 hour.

Remove the pan and preheat the oven to 425F.

While the oven heats, drizzle the remaining 1 tablespoon olive oil over the dough.

Gently dimple the dough with fingertips, then sprinkle with flaky sea salt and optional pepper.

Bake for 21-24 minutes until golden brown.

Cool slightly before slicing.
