Quick Empanadas with Seasoned Pork and Cheese

Instructions

  1. Preheat oven to 350 F.

  2. In a skillet, cook onion and garlic in oil over medium heat until soft.

  3. Add ground pork, 1 packet Goya seasoning, and cumin; cook, stirring, until pork is browned.

  4. Stir in beef broth and simmer over low heat until most liquid has evaporated.

  5. Remove from heat, then stir in cream cheese and grated cheddar; season with salt and pepper to taste.

  6. On a floured surface, roll out one puff pastry sheet to approximately 12 by 18 inches.

  7. Cut about 8 dough rounds, 3 to 4 inches in diameter.

  8. Place 1 tablespoon of filling in each round; moisten edges with water, fold into a half-moon shape, and crimp to seal.

  9. Arrange empanadas on a greased baking sheet, brush with egg wash (egg mixed with 1 tablespoon water), and bake for about 15 minutes until puffy and golden brown.

  10. Repeat with the second pastry sheet, utilizing dough scraps for additional rounds.
