Quick-Browned Sautéed Onions

Instructions

  1. Slice onions thinly into half-moons or dice as desired.

  2. Heat butter or oil in a large sauté pan over medium-high heat until shimmering.

  3. Add onions and salt, stirring to coat.

  4. Cook without stirring for 1 to 2 minutes until browning starts, then stir and continue cooking for another minute to deepen browning.

  5. Stir onions occasionally for about 10 minutes until thoroughly browned yet slightly firm; if using sherry, deglaze the pan and reduce until almost evaporated.
