Quick Blender Chocolate Mousse

Instructions

  1. Combine chocolate chips, eggs, and flavoring in a blender; simultaneously, heat cream until very hot but not boiling.

  2. With the blender running, gradually pour in the hot cream and blend until the chocolate melts and the mixture is smooth.

  3. Transfer the mixture to a saucepan and heat to 170-175 F, or until it coats the back of a spoon.

  4. Pour the mixture into a bowl, cover its surface with plastic wrap, and refrigerate for 2-3 hours until thoroughly chilled.

  5. Serve the chilled mousse in individual dessert dishes, optionally garnished with whipped cream or shaved chocolate.
