Quick and Full-Flavored Chicken Broth

Instructions

Heat vegetable oil in a large pot over medium-high heat.

Add diced onion and chicken pieces; sauté 5 to 7 minutes until chicken is no longer pink.

Reduce heat to low, cover, and cook for 20 minutes until chicken releases its juices.

Increase heat to high, add 2 quarts of water, salt, and bay leaves.

As water simmers, reduce heat to low, cover, and simmer 20 to 30 minutes until the broth is rich.

Strain the broth and discard all solids.
