Instructions

  1. In a large pot, simmer garlic, onion, and carrots in water over medium-high heat until onions soften.

  2. Add vegetable broth and continue simmering for 5-6 minutes until carrots are tender.

  3. Stir in hominy, crushed tomatoes, bell pepper, cumin, salt, pepper, and chili powder.

  4. Bring the mixture to a boil.

  5. Reduce heat to medium-low, then cover and simmer for 20-35 minutes.

  6. Ladle into bowls and garnish as desired.
