Quick and Easy Turkey Tetrazzini

A shortcut turkey tetrazzini casserole features spaghetti, cream of mushroom soup, cheese, and your choice of turkey or chicken.

Instructions

  1. Preheat oven to 350 F (180 C) and start boiling salted water.

  2. Cook spaghetti in the boiling water; drain well.

  3. Grease a 2.5-3 quart casserole dish.

  4. In a large bowl, combine the drained spaghetti with 1 cup cheddar, 2 tablespoons Parmesan, diced turkey, and pimientos.

  5. Sauté mushrooms and onions in butter until tender. Stir the sautéed vegetables into the spaghetti mixture, along with cream of mushroom, chicken stock, sherry, and season with salt and pepper.

  6. Transfer the mixture to the prepared casserole dish and sprinkle with the remaining cheddar and Parmesan.

  7. Cover and bake for 45 minutes, or until hot and bubbly.

  8. Optionally, broil for 4-6 minutes to brown the top.
