Instructions

  1. Preheat the oven to 350 F.

  2. Cook rice as directed on the package.

  3. Lightly grease a 2-quart casserole dish.

  4. In a skillet over medium heat, cook ground beef and onion until no longer pink; add bell pepper and cook for 2 minutes.

  5. To the beef mixture, stir in beans, tomato sauce, corn, salt, pepper, chili powder, garlic powder, cumin, 2 tablespoons chopped cilantro, and the cooked rice.

  6. Spoon the mixture into the prepared casserole.

  7. Bake for 25 minutes.

  8. Top with shredded cheese and cook for 5 minutes longer, or until melted.

  9. Garnish with additional chopped cilantro or green onions, if desired.
