Quick and Easy Tex-Mex Beef and Rice Bake

Instructions

Preheat the oven to 350 F.

Cook rice as directed on the package.

Lightly grease a 2-quart casserole dish.

In a skillet over medium heat, cook ground beef and onion until no longer pink; add bell pepper and cook for 2 minutes.

To the beef mixture, stir in beans, tomato sauce, corn, salt, pepper, chili powder, garlic powder, cumin, 2 tablespoons chopped cilantro, and the cooked rice.

Spoon the mixture into the prepared casserole.

Bake for 25 minutes.

Top with shredded cheese and cook for 5 minutes longer, or until melted.

Garnish with additional chopped cilantro or green onions, if desired.
