Instructions

  1. Preheat an electric griddle to 375 F or a large skillet over medium-high heat.

  2. Whisk together the baking mix, eggs, milk, pumpkin, sugar, cinnamon, and nutmeg; avoid overmixing.

  3. Let the batter rest for 10 minutes.

  4. Reduce griddle to 350 F or burner to medium; lightly spray griddle if needed.

  5. Ladle 1/4-cup batter onto the griddle; cook until edges set and surface bubbles.

  6. Flip and cook for 1 to 3 minutes until golden brown.

  7. Repeat with remaining batter and serve immediately with desired toppings.
