Instructions
-
Preheat the oven to 475°F and place a heavy baking sheet or stone on the lowest rack.
-
Activate yeast by combining it with 1/4 cup warm water and sugar; let stand 10 minutes.
-
Sift flour and salt into a bowl, then add the yeast mixture, remaining warm water, and 1 tablespoon olive oil.
-
Mix to form a dough, then knead on a floured surface for 10 to 15 minutes until smooth and soft.
-
Place the dough in an oiled bowl, turn to coat, cover, and let rise in a warm place for 1 to 1 1/2 hours until doubled.
-
Roll the dough into a 9x12 inch rectangle, about 1/2 inch thick, folding and re-rolling a few times to remove air bubbles.
-
Divide the dough into 10 pieces, then roll each piece into a 7-inch diameter circle, 1/4 inch thick.
-
Place pitas on the preheated, lightly floured baking sheet.
-
Bake for about 5 minutes, flipping once, until they begin to show color.
-
Remove from oven, cover with a towel, and repeat with remaining dough.
