Quick and Easy Fried Tomatillos

Instructions

  1. Heat 1/2 inch of oil in a wide, heavy pan over medium-high heat until it reaches 375 F.

  2. Remove husks, rinse, pat dry, and slice tomatillos into 1/2-inch-thick rounds.

  3. Prepare a breading station with three bowls: one containing flour, salt, pepper, and cayenne; one with whisked egg and 1/4 cup water; and one with bread crumbs or cornmeal.

  4. Coat each tomatillo slice by first dredging in the flour mixture, then dipping in the egg wash, and finally pressing into the bread crumbs until fully coated. Place on a tray.

  5. Fry coated tomatillo slices in a single layer until golden brown on both sides, then transfer to a cooling rack over paper towels to drain.

  6. Sprinkle with salt and serve immediately.
