Instructions

  1. Combine chickpeas, minced garlic, finely chopped onion, finely chopped parsley, ground coriander, ground cumin, kosher salt, and black pepper in a bowl.

  2. Add 2 tablespoons of all-purpose flour and mix thoroughly, mashing chickpeas until a thick, binding paste forms; optionally, use a food processor to blend the mixture for about 1 minute, adding an extra tablespoon of flour if sticky.

  3. Shape the mixture into slightly flattened, pingpong-sized balls.

  4. Heat 1 1/2 cups vegetable oil in a large skillet over medium-high heat until shimmering.

  5. Shallow-fry falafel in batches for 2 to 5 minutes per side until browned, adding more oil if needed.

  6. Remove from skillet and drain on paper towels.

  7. Serve as desired.
