Quick and Easy Bean Soup With Sausage

Instructions

  1. Chop onion, dice carrots, and dice bell pepper.

  2. Heat olive oil in a stockpot over medium heat; sauté onion for 3 minutes.

  3. Add carrots, bell pepper, celery, minced garlic, and sausage; cook 2 minutes, draining fat if needed.

  4. Stir in lima beans, salt, pepper, basil, and chicken stock; bring to a boil.

  5. Reduce heat to low, cover, and simmer 30 minutes.

  6. Add drained and rinsed beans; simmer uncovered 10 minutes.

  7. Stir in chopped parsley and serve, topping with croutons if desired.
