Quick Amish Cinnamon Bread Recipe
A quick bread, lightly sweet and studded with cinnamon sugar, is a faster and simpler alternative to traditional friendship bread.

Instructions

Preheat the oven to 350 F and spray an 8 1/2 x 4 1/2-inch loaf pan with cooking spray.

Cream butter with 1/2 cup granulated sugar and brown sugar until light and fluffy.

Incorporate the egg, vanilla, yogurt, and milk into the creamed mixture.

Sift in flours, 3/4 teaspoon cinnamon, and baking soda, then mix until just combined.

Spread half the batter into the prepared pan.

Combine 2 tablespoons sugar and 3/4 teaspoon cinnamon, then sprinkle over the batter.

Cover with the remaining batter and sprinkle additional sugar, if desired.

Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.

Cool the bread slightly before removing it from the pan to a wire rack for complete cooling.
