Quesadilla Breakfast Tacos

A satisfying breakfast quesadilla features scrambled eggs and various desired toppings encased within two cheesy tortillas.

Instructions

  1. Beat eggs with salt and pepper.

  2. Heat a nonstick skillet over medium heat; warm one tortilla for 30-60 seconds.

  3. Top the warmed tortilla with 1/4 cup shredded cheese; melt for 1 minute.

  4. Place a second tortilla on top of the melted cheese, flip, and cook for 1 minute or until lightly browned.

  5. Transfer the cooked quesadilla to a warm plate and cover; repeat this process to make a second quesadilla.

  6. Reduce skillet heat to medium-low, melt butter, then add the beaten eggs.

  7. Scramble eggs for 1-2 minutes until mostly set, then turn off heat and continue scrambling until desired doneness.

  8. Divide scrambled eggs evenly between the two quesadillas.

  9. Garnish each quesadilla with a tablespoon of shredded cheddar, Greek yogurt, and other chosen toppings; fold to serve.
