Instructions

  1. In a large pan, fry diced bacon over medium heat until crisp; remove bacon and drain all but 1/4 cup of the rendered fat.

  2. Add diced potatoes to the pan and stir-fry in the bacon fat until browned and crisp, then remove.

  3. Melt butter in the pan; sauté chopped onion until softened.

  4. Stir in chopped meat and brown for 5 minutes. Return the bacon and potatoes to the pan, mixing well, and heat on low until warmed through.

  5. Concurrently, fry eggs sunny-side up in a separate pan.

  6. Serve the hash on individual plates, topped with a fried egg.
