Purple Hull Peas and Spicy Sausage

Heat oil in a medium skillet; sauté onion and garlic until softened, 3 to 5 minutes.

Transfer the onion and garlic mixture to a medium saucepan, then add peas and chicken broth. Cover and simmer over low heat for 30 minutes.

Slice the sausage, then cook it in a skillet until browned. Add the sausage to the peas, cover, and simmer for an additional 20 minutes, or until the peas are tender.

Uncover the saucepan and increase heat to medium, cooking for 3 to 5 minutes to slightly reduce the liquid.

Season with salt and pepper to taste and serve.
