Instructions

  1. Butter individual pudding molds.

  2. Heat 2 tablespoons water with 6 tablespoons sugar in a saucepan, simmering until browned; thin with 1 tablespoon warm water, then pour into the prepared molds.

  3. Heat milk to 140 F, dissolve 2/3 cup sugar, and stir in vanilla extract.

  4. Lightly beat eggs, then gradually whisk in the warm milk mixture.

  5. Strain the egg mixture and remove any surface bubbles.

  6. Pour the strained egg mixture over the caramel in the molds.

  7. Place molds in a steamer, and steam on low heat for 15 to 20 minutes until set.

  8. Cool the purin, then remove from molds and serve.
